LITTLE ROCK, Ark. – Five days a week,  Zoltan Lapicz is in the kitchen chopping, scooping and following is recipes to a T.  Zoltan is no ordinary chef and this is no ordinary meal. It follows the nutritarian diet.
“It’s basically nothing with a face.”
Nutritarian is not about eating any old vegetable, only the ones extremely high in nutrients  and some animal products. Zoltan avoids animal foods all together. He is making tacos – filled with a Japanese plant called jack fruit.
“You shred it real good so it’s got the consistency of pulled pork,” he said.
Crab cakes with no crab are also on the menu. Instead, hearts of palm from palm trees. Zoltan believes nutritarian is becoming a nationwide health movement said, “It’s been shown that plants reduce the risk of cancer.”
Dr. Christie Beck’s whole family  is nutritarian and believes this diet is a strong defense against cancer.
“We’re all going to die.” she said.  “I just like to think that I’m not going to be personally contributing to my death by what I eat.”
 According to Dr. Joel Fuhrman, a leading nutritarian advocate, certain vegetables have more nutrients than others. They’re called cruciferous and include foods like kale, bok choy and cauliflower.  He said they reduce your cancer risk dramatically.
For example, 28 servings of vegetables per week decreased prostate cancer risk by 33 percent,
but only 3 servings of cruciferous vegetables per week decreased prostate cancer risk by more than 40 percent.
There are other benefits. Dr. James Studdard is a pancreatic cancer survivor and eats meals prepared by Zoltan.
After Studdard’s pancreas was removed, he became heavily dependent on insulin injections.
That changed.
“I noticed a 30-percent decrease on the amount of insulin i was having to use,”  said Studdard.
But preparing nutritarian is a challenge.
“It is. It’s also a challenge to eat out. You’re buying a lot of products. I shop for all my ingredients everyday.”
Zoltan believes it’s worth it. Dr. Beck said, “I think it’s about awareness of what you put in your body to lead a healthier  and possibly cancer free life.
